Our wild mackerel is a jack mackerel sourced from Chile, and it is caught using purse-seines that minimize bycatch. We smoke it over fragrant Mediterranean bay wood and leaves, adding no other seasonings except salt and extra-virgin olive oil. An excellent source of protein and vitamin B-12*, this small fish offers the mild taste and meaty texture of a big fish.

Cook with Provisions

Having people over is fun. Getting stuck in the kitchen is not. We aim for big flavor payoffs in a short amount of time.
